The World’s Best Scones (in our humble opinion)

When we travel for work, we often stay in people’s homes and get to enjoy their cooking. This recipe is originally from our friend Jane Nigh, the manager of Villages Port Colborne, formerly Ten Thousand Villages, in Port Colbourne, Ontario. Many years ago when Yousaf stayed at her house, he came back telling everyone about the most awesome scones in the world. I was excited to get the recipe (as I was never a huge scone fan) but oh my, these are truly AMAZING! We hope you enjoy them as much as we do!

2 ¼ cup/270g unbleached white flour
2 tablespoons/25g sugar
2 ½ teaspoon/10g baking powder
½ teaspoon/3g baking soda
½ teaspoon/3g salt
½ cup/113g butter
¾ cup/180ml buttermilk or little more

(I never have buttermilk on hand so just mix 1 tablespoon vinegar into ¾ cup milk to make buttermilk)

Whisk dry ingredients together and then cut butter into dry mixture. Add buttermilk and stir to combine. Put the mass on a board and use scraper to bring it together into a circle. Fold and pat down four to five times. Cut in two and make two circles. 

So, here’s where we’re going to get a little creative. Circle One will be the classic scone recipe and Circle Two will be your own scone creation! I’m so anxious to hear what your special ingredient will be!

Circle One: Cut into 6 wedges and place on a baking sheet. Brush with milk and sprinkle with sugar.

Circle Two: Fold in your special ingredient, maybe ½ cup chocolate chips or nuts or raisins or ????. Or maybe make them savory and mix in cheese and chives or garlic or bacon or ???? Reform into a circle. Cut into 6 wedges and place on baking sheet. Brush with milk and sprinkle with sugar (if making sweet ones… sprinkle with something savory if making savory ones) 

Bake scones on a parchment-covered or greased cookie sheet at 425 degrees for 15-20 minutes.
